A fistful of cocktail recipes to try while watching UFC 264: Dustin Poirier vs. Conor McGregor trilogy.

It’s one of the biggest fight nights of the year as we finally get to settle the Dustin Poirier vs. Conor McGregor score once and for all. Each man holds a win over the other and there’s plenty of reasons to celebrate.

In case you are hosting a party (yay COVID restrictions are over!) we’ve got some cocktail recipes fit for the UFC event including some custom recipes from Conor McGregor’s Proper No. Twelve. Here are six proper recipes plus two BBQ sauce recipes to add to your bar book. And keep scrolling, there are some non-Proper No. Twelve recipes too.

Proper Lemonade

1 part Proper No. Twelve Irish Whiskey

4 parts Lemonade

Directions: Fill glass with ice. Add Proper No. Twelve and lemonade. Garnish with a slice on lemon.

2 parts Proper No. Twelve Irish Whiskey

2 parts Lemonade

2 parts Iced Tea

Directions: Pour Proper No. Twelve over ice. Add lemonade and iced tea. Stir. Garnish with lemon slice.

Proper Bloody Mary

1.5 parts Proper No. Twelve Irish Whiskey

3 parts Tomato Juice

1/3 part Lemon Juice

4 dashes Worcestershire Sauce

1 bar spoon Pickle Juice

1/2 bar spoon Horseradish

Squeeze of Lime Juice

1 pinch Celery Salt or Table Salt

1 pinch Ground Black Pepper

Directions: Add all ingredients to a shaker and fill with ice. Shake and strain into a tall glass filled with fresh ice. Garnish with a celery stalk, lemon wedge, and olives.

Proper Iced Coffee

1 part Proper No. Twelve Irish Whiskey

4 parts Cold Coffee

Milk or creamer of choice

Sweetener of choice

Directions: Fill glass with ice.  Add Proper No. Twelve and cold coffee. Add creamer and sweetener to taste. Stir to combine.

Proper Mule

2 oz Proper No. Twelve Irish Whiskey

.5 oz lime juice

3 oz ginger beer

Lime wedge

Directions: Add ice to copper mug. Add Proper No. Twelve Whiskey, lime juice and ginger beer to the glass. Garnish with a lime wedge.

Proper Craic Water

2 oz Proper No. Twelve Irish Whiskey

1 oz Coconut Water

Juice of Half a Lime

Mineral Water

Directions: Build in highball glass over ice. Top w/ Mineral Water. Garnish w/ Lime Wedge

The Proper Whiskey Barbecue Sauce

1/2 cup Proper No. Twelve Whiskey

1/2 tsp Ground Black Pepper

1 tbsp Garlic Powder

1 tbsp Onion Powder

1/2 tbsp Salt

3 cups Ketchup

1/3 cup Cider Vinegar

1/4 cup Worcestershire sauce

1/2 cup Packed Brown Sugar

1/3 tsp Hot Pepper Sauce

Directions: Bring it to a boil in a sauce pot. Let it simmer for 20 minutes. Serve.

Proper Peppercorn Steak Sauce

2 tbsp Proper No. Twelve Irish Whiskey

1 tbsp cracked black peppercorns

1 small shallot, finely chopped

1 large clove of garlic, minced

3 tbsp butter

3/4 cup beef broth

1/2 cup heavy cream

Worcestershire sauce (optional)

Directions:

Cook steak to your liking, then remove and cover while you make the sauce.

Add peppercorns to the same pan used to cook the steak and heat for 1-2 min.

Add shallots, garlic and 1 tbsp butter. Sauté over medium heat until shallots soften.

Add Proper No. Twelve Whiskey and bring to a simmer for 1-2 minutes. Deglaze the pan by stirring with a wooden spoon, incorporating any remaining bits from the steak.

Add the beef stock and bring to high heat. Reduce the sauce by half (4-5 minutes).

Mix in heavy cream and simmer for 1-2 minutes, stirring continuously.

Remove from heat, add remaining butter and whisk for 1-2 minutes. Salt to taste. Optional: Add any juice from resting steak and a dash of Worcestershire sauce.

Pour over steaks and serve—pairs best with a Proper on the Rocks!

Captain Morgan Frozen Pina Colada

1.5oz Captain Morgan Original Spiced Rum

0.5oz Lime Juice

1oz Cream of Coconut

0.5oz Coconut water

0.5oz Pineapple Juice

Ice

Directions: Combine all ingredients in a blender and blend until smooth

Wild Little Thing Strawberry Sparkler

1 strawberry

6 basil leaves

½ tsp sugar

1 oz lemon juice

1.5 oz vodka

Sierra Nevada Wild Little thing

Garnish: Strawberry and basil leaves

Directions: Muddle the strawberries, basil leaves, sugar and lemon juice in the bottom of a glass, then add vodka. Add in your crushed ice, then top off with Wild Little Thing. Stir ingredients together & enjoy!

Milagro Margarita Asada

Ingredients:

2 Parts Milagro Silver

1 Part Fresh Lime Juice

1 bar spoon Agave Nectar

2 chunks Grilled Pineapple

1 bar spoon Chipotle Powder*

Directions: Muddle grilled pineapple and chipotle powder in a Boston shaker, add remaining ingredients. Add ice and shake well. Double strain over fresh ice into a kosher salt and chipotle powder rimmed rocks glass. Garnish with a grilled pineapple and lime wheel. *Can be replaced with a dash of smoky BBQ sauce.

Noah’s Ark by ZIZI NYC

Ingredients:

1.75oz Zachlawi Dry Arak

0.25oz Omhpiko Mastiha liquor

2oz Fresh homemade watermelon juice

0.5 Lime

Cucumber strip

Watermelon cube

Mint

Zaatar salt rim

Directions: 1. Mix equal amounts of zaatar and salt in a shallow bowl 2. Rub a watermelon cube around half the rim of a tall glass. Dip one side of the watermelon cube in the zaatar mix. Leave watermelon cube to the side. 3. Combine Arak, Mastiha liquor, watermelon juice, lime juice and a cup of ice in a shaker. Shake vigorously 4. Strain over fresh ice into glass 5. Garnish with a cucumber strip, fresh mint and the watermelon cube

Chambord Spritz

1 oz Chambord

3 oz white wine

2 oz soda water

Mint Sprig

Black Raspberries

Directions: Take a large wine and fill it with lots of ice. Then add the Chambord, white wine and soda. Finally, garnish it with black raspberries and mint.

Recuerdo Mezcal Blues

1 1/2 oz Recuerdo Joven Mezcal

1 oz blue curacao

1/2 oz lime juice

1 oz mint syrup (1 cup water, 1 cup sugar, 2-3 bunches fresh mint. Simply heat the water, sugar, and mint to a gentle boil and reduce to a simmer for 1-2 minutes while stirring. Pull off the heat and allow to sit for 30-60 minutes to infuse the mint. Cool and strain the mint.)

5 fresh raspberries

Tonic water

Directions: Muddle a couple of raspberries with the Mezcal, lime juice and syrup, serve in a old fashioned with ice, add the curazao, fill with tonic water and top with 3 fresh raspberries to garnish.

Cuatro de Cuervo Tradicional

2 oz Jose Cuervo® Tradicional® Plata Tequila

.75 oz Fresh lime juice

.75 oz Simple syrup (one part sugar, one part water)

.25 cup Fresh blueberries

6-8 dashes Peychaud’s Bitters

Directions: Muddle the blueberries in the bottom of a Collins glass, top with crushed ice and set aside. Add the rest of the ingredients to a shaker and fill with ice. Shake, and strain into the prepared glass. Top with more crushed ice and garnish with bitters.

Recuerdo Lilly Mezcal

1 1/2 oz Recuerdo Joven Mezcal

2 oz cream of coconut

1 oz blue curacao

1 dash evaporated milk

5 fresh raspberries

1 small piece of ginger

Directions: In a martini glass, muddle 2 raspberries with the curacao and 3/4 oz of Recuerdo Mezcal. Mix the cream of coconut, the evaporated milk, the ginger and 3/4 oz of Recuerdo Mezcal in a blender with plenty of ice, to the consistency of ice cream. Serve this mix on top of what we muddled in the martini glass, and garnish with 3 raspberries on top.

Piña CoNada

Ingredients:

1.5 parts Sailor Jerry

1 part coconut milk

1 part coconut water

3 parts Pineapple Sparkling Water

Directions: Shake and strain into Collins glass with fresh ice top with Pineapple sparkling water. Garnish with mint sprig.
